Is the dj the one who's back there ordering a beer?

It's a mixer/cross fader probably with a lo pass/hi pass filter. It's used for blending songs together and EQing. 1 guy usually does the trick... In this instance it may have required three.

what does an equalizer do?

You can emphasize or cut the high/mid/low frequencies. Want more hi hats and other high pitched sounds? Turn up the highs. More bass? Lows. Vocals? Mids. Really the best way to find out how this stuff works is by opening the EQ on iTunes or something and just fucking around with the levels.
